I’m a sucker for a good cupcake – especially a vanilla cupcake. This recipe is my favourite from scratch vanilla cupcake – I wouldn’t go back to making them from a box after finding this gem. These soft and fluffy vanilla cupcakes are topped with a simple vanilla buttercream. Yum.

The Perfect Vanilla Cupcake
Serves: 14 cupcakes
Ingredients
Cupcakes
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 3 large eggs
- 1 tablespoon vanilla
- 3/4 cup buttermilk
Vanilla Buttercream
- 1 cup unsalted butter, softened
- 1/4 teaspoon salt
- 5 and 1/2 cups powdered sugar
- 1 tablespoon vanilla
- 1-2 tablespoons heavy whipping cream
Instructions
Cupcakes
- Preheat the oven to 350 degrees and line your cupcake pan with the liners.
- Mix flour, baking powder and salt in a medium bowl.
- Add melted butter to a large bowl with sugar. Beat with electric mixer until well combined.
- Add eggs one at a time, beating after each one. Add vanilla.
- Alternately add the flour and buttermilk, starting and ending with the flour.
- Fill your cupcake tins 2/3 full.
- Bake for 15-20 minutes - until a toothpick comes out clean.
- Let cool before frosting.
Vanilla Buttercream
- Beat the butter until creamy - about 4-5 minutes.
- Add salt and 1 cup of powdered sugar at a time until its all combined.
- Beat in vanilla and 1 tbsp of heavy cream. You may need to add more cream to achieve desired consistency.
- Frost your cupcakes and enjoy!
