The Perfect Vanilla Cupcake

I’m a sucker for a good cupcake – especially a vanilla cupcake. This recipe is my favourite from scratch vanilla cupcake – I wouldn’t go back to making them from a box after finding this gem. These soft and fluffy vanilla cupcakes are topped with a simple vanilla buttercream. Yum.

Serves: 14 cupcakes
Ingredients
Cupcakes
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 3 large eggs
  • 1 tablespoon vanilla
  • 3/4 cup buttermilk
Vanilla Buttercream
  • 1 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 5 and 1/2 cups powdered sugar
  • 1 tablespoon vanilla
  • 1-2 tablespoons heavy whipping cream
Instructions
Cupcakes
  1. Preheat the oven to 350 degrees and line your cupcake pan with the liners.
  2. Mix flour, baking powder and salt in a medium bowl.
  3. Add melted butter to a large bowl with sugar. Beat with electric mixer until well combined.
  4. Add eggs one at a time, beating after each one. Add vanilla.
  5. Alternately add the flour and buttermilk, starting and ending with the flour.
  6. Fill your cupcake tins 2/3 full.
  7. Bake for 15-20 minutes - until a toothpick comes out clean.
  8. Let cool before frosting.
Vanilla Buttercream
  1. Beat the butter until creamy - about 4-5 minutes.
  2. Add salt and 1 cup of powdered sugar at a time until its all combined.
  3. Beat in vanilla and 1 tbsp of heavy cream. You may need to add more cream to achieve desired consistency.
  4. Frost your cupcakes and enjoy!
