Spicy Peanut Beef Stirfry

This spicy peanut stir-fry is an easy dinner, with ingredients you probably already have at home. I like that you can choose how spicy you want your sauce depending on the day. This goes great over garlic rice, and tastes just as good, if not better the second day as leftovers!

Serves: 2-4
Ingredients
Spicy Peanut Sauce
  • 1/2 cup smooth peanut butter
  • 1 teaspoon minced garlic
  • 2 tablespoon soya sauce
  • 10-15 shakes of hot sauce
  • 1/2 cup water
Stirfry
  • 1 pack stir-fry beef
  • Broccoli Crowns
  • 1 Bunch of carrots
  • 1 Onion
  • 5 stalks of celery
  • red pepper
  • 1 tsp avocado oil
Instructions
Spicy Peanut Sauce
  1. In a medium bowl combine peanut butter, garlic, soya sauce and hot sauce - stir until smooth.
  2. Add 1/4 cup of water to start, and stir until combined.
  3. Add the rest of the water and mix well.
Stirfry
  1. In a large skillet on medium heat add the avocado oil and the stir-fry beef.
  2. Once the beef is cooked add your cut up vegetables.
  3. Add your spicy peanut sauce and cover with a lid.
  4. Leave covered for 7-10 minutes on low heat, until sauce is thickened and your vegetables are cooked.
