These cookies are ah-mazing! Its like eating a cookie and with a cake-y center. If you’re anything like me you’ll try the uncooked cookie dough – its a mix between normal cookie dough and uncooked box cake mix – so good. The sprinkles and chocolate chips only add to the goodness of these cookies. Enjoy them while they last – because they won’t last long!
What You’ll Need
- Stand Mixer – with the paddle attachment
- Large Bowl
- Silpat or parchment paper
- Baking Sheet
- Wire Cooling Rack
Funfetti Cake Batter Cookies
Serves: 2 dozen
Ingredients
- 1 and 1/4 cup all-purpose flour
- 1 and 1/4 cup vanilla boxed cake mix
- 1/2 teaspoon baking soda
- 3/4 cup unsalted butter, softened to room temperature
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 egg - at room temperature
- 1 and 1/2 teaspoons vanilla extract
- 1 cup chocolate chips - I used a blend of semi sweet and white chocolate chips
- 1/2 cup sprinkles
Instructions
- In a large bowl sift together flour, cake mix and baking soda.
- Using your stand mixer with the paddle attachment cream the butter and both sugars on medium until smooth.
- Add the egg and beat on high until combined.
- Add the vanilla and beat well.
- Add the flour mixture to the wet ingredients on low - medium until just combined.
- Add the chocolate chips and sprinkles on low until they're evenly distributed.
- Cover tightly wish plastic wrap and chill in the fridge for at least 2 hours - this step is mandatory.
- Once the dough is chilled, preheat the over to 350 degrees.
- Scoop the rounded balls of the chilled dough onto your silpat lined baking sheet.
- Shape your cookie dough balls taller than they are wide - this makes for a thicker cookie.
- Be sure to chill the dough between batches.
- Bake the cooker for 10-12 minutes - until the edges are golden brown.
- The center of the cookie will appear soft, but will set as it cools.
- You may press a few extra chocolate chips on top right when they come out of the oven - the chips will stick and melt to the warm cookie.
- Let cookies cool for 4 minutes before transferring to a wire cooling rack.
