Mini Chocolate Chip Muffins
Serves: about 36 mini muffins
 
Ingredients
  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 eggs - at room temperature
  • 1 cup granulated sugar
  • 1 cup milk
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • 1 cups semi-sweet chocolate chips - or any kind of chocolate you'd like!
Instructions
  1. Preheat your oven to 375 degrees and spray your muffin tin with non stick spray or muffin liners and set aside.
  2. In a large bowl combine flour, baking powder, salt, cinnamon, and nutmeg.
  3. Mix with your whisk or fork until all dry ingredients are combined and set aside.
  4. In a medium bowl whisk together eggs and sugar until combined.
  5. Mix in milk, oil, and vanilla.
  6. Fold wet ingredients into dry ingredients and mix everything together by hand with a wooden spoon - make sure to avoid over mixing.
  7. Lightly mix until all the flour is off the bottom of the bowl.
  8. The batter will be VERY thick.
  9. Fold in the chocolate chips.
  10. Pour batter into prepared muffin tins, filling all the way to the top.
  11. Bake for 9-10 minutes - until slightly golden - and allow to cool before removing from the muffin tin.
