Mini Chocolate Chip Muffins
Serves: about 36 mini muffins
- 3 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 eggs - at room temperature
- 1 cup granulated sugar
- 1 cup milk
- 1/2 cup canola oil
- 1 teaspoon vanilla extract
- 1 cups semi-sweet chocolate chips - or any kind of chocolate you'd like!
- Preheat your oven to 375 degrees and spray your muffin tin with non stick spray or muffin liners and set aside.
- In a large bowl combine flour, baking powder, salt, cinnamon, and nutmeg.
- Mix with your whisk or fork until all dry ingredients are combined and set aside.
- In a medium bowl whisk together eggs and sugar until combined.
- Mix in milk, oil, and vanilla.
- Fold wet ingredients into dry ingredients and mix everything together by hand with a wooden spoon - make sure to avoid over mixing.
- Lightly mix until all the flour is off the bottom of the bowl.
- The batter will be VERY thick.
- Fold in the chocolate chips.
- Pour batter into prepared muffin tins, filling all the way to the top.
- Bake for 9-10 minutes - until slightly golden - and allow to cool before removing from the muffin tin.
