Banana Bread (Gluten Free)
Serves: 2 x 8" loaves
 
Ingredients
  • 2 large eggs
  • 1/2 cup honey
  • 3/4 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 1 and 1/2 cup brown rice flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1 and 1/2 cups mashed ripe bananas - about 4-5 medium bananas
  • 2/3 cup semi-sweet chocolate chips - optional
Instructions
  1. Preheat your oven to 360 degrees.
  2. Spray you 8" loaf pans with non-stick spray and set aside - I only have one pan and just cooked the second loaf once the first one was cool enough to remove from the pan.
  3. Using the large bowl mix together the eggs, honey, applesauce and vanilla.
  4. In a medium bowl combine the brown rice flour, salt, baking soda, baking powder and cinnamon together.
  5. Slowly Mix the dry ingredients to the applesauce mixture until well combined.
  6. Mix in the mashed bananas until fully combined - make sure your bananas are very well mashed.
  7. Stir in your chocolate chips.
  8. Split the mixture between the 2 pans.
  9. Bake for 45 minutes - until edges are golden brown and a toothpick comes out clean.
