Lemon Blueberry Cookies
 
Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs - room temperature
  • 2 teaspoon pure vanilla extract
  • Zest of one lemon
  • Juice of one lemon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 3 and 1/4 cups cake flour
  • 1 and 1/2 cups blueberries
Instructions
  1. In your stand mixer, fitted with the paddle attachment, beat the butter and sugar until light and fluffy.
  2. Add eggs, beating after each addiction.
  3. Add the vanilla, lemon zest and lemon juice - beat until well combined.
  4. In a large bowl whisk together all dry ingredients.
  5. With your mixer on low speed, slowly add the dry ingredients to the wet ingredients - scraping down the sides as needed.
  6. Mix until all combined.
  7. Fold in your blueberries - I used fresh blueberrys, but you can use frozen too, just make sure they are thawed and patted dry - be sure not to break them while folding them into the batter.
  8. Cover your bowl with plastic wrap and let cool in fridge for at least an hour - this step is mandatory.
  9. Heat your oven to 350 degrees.
  10. Using a small scoop - about 1 tablespoon - place rounded mounds of dough onto your baking sheet lined with your silpat.
  11. Bake for 11-14 minutes until the bottoms are slightly golden - mine took 11 minutes, so make sure to check!
  12. Place dough back into the fridge when working in batches or it gets too sticky.
