Funfetti Cake Batter Cookies
Serves: 2 dozen
 
Ingredients
  • 1 and 1/4 cup all-purpose flour
  • 1 and 1/4 cup vanilla boxed cake mix
  • 1/2 teaspoon baking soda
  • 3/4 cup unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 egg - at room temperature
  • 1 and 1/2 teaspoons vanilla extract
  • 1 cup chocolate chips - I used a blend of semi sweet and white chocolate chips
  • 1/2 cup sprinkles
Instructions
  1. In a large bowl sift together flour, cake mix and baking soda.
  2. Using your stand mixer with the paddle attachment cream the butter and both sugars on medium until smooth.
  3. Add the egg and beat on high until combined.
  4. Add the vanilla and beat well.
  5. Add the flour mixture to the wet ingredients on low - medium until just combined.
  6. Add the chocolate chips and sprinkles on low until they're evenly distributed.
  7. Cover tightly wish plastic wrap and chill in the fridge for at least 2 hours - this step is mandatory.
  8. Once the dough is chilled, preheat the over to 350 degrees.
  9. Scoop the rounded balls of the chilled dough onto your silpat lined baking sheet.
  10. Shape your cookie dough balls taller than they are wide - this makes for a thicker cookie.
  11. Be sure to chill the dough between batches.
  12. Bake the cooker for 10-12 minutes - until the edges are golden brown.
  13. The center of the cookie will appear soft, but will set as it cools.
  14. You may press a few extra chocolate chips on top right when they come out of the oven - the chips will stick and melt to the warm cookie.
  15. Let cookies cool for 4 minutes before transferring to a wire cooling rack.
