Homemade Maple Granola

Ingredients
  • 3 cups oats
  • 1 cup pumpkin seeds
  • 1 cup sunflower seeds
  • 1 1/4 cup pecans - roughly chopped
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup unsweetened coconut flakes (optional)
  • 3/4 cup maple syrup
  • 1/4 cup avacado or canola oil
  • 1/4 cup brown sugar
  • 1/2 - 1 cup dried cranberries (optional)
Instructions
  1. Preheat your oven to 300 degrees and line your baking sheet with parchment paper - be sure to use a baking sheet with higher edges so the granola doesn't spill when stirring.
  2. In your large bowl toss the oats, pumpkin seeds, sunflower seeds, pecans, coconut, salt and cinnamon - set aside.
  3. In a small bowl whisk together the maple syrup, oil and brown sugar.
  4. Pour over your oat mixture and using a spatula to make sure everything is evenly distributed.
  5. Pour granola onto your lined baking sheet and place into your heated oven for 45 minutes.
  6. Stir your granola every 15 minutes to be sure everything is cooking evenly.
  7. *It will feel soft until its done cooking and has time to cool down*
  8. Once the granola has cooked for 45 minutes let cool for 30 minutes before mixing in your dried cranberries and transferring to a large Ziplock bag or air tight container.
  9. Store for up to a month.
