You know those days where you could eat an entire pan of brownies and be ok with it? No? Just me?

Well, you won’t feel bad eating half the pan of these Sweet Potato Brownies this weekend.

They’re packed with mashed sweet potato, peanut butter, cocoa powder and sweetened with maple syrup – pretty good so far, right? Top them with a mocha frosting, and you won’t be able to stop yourself from eating more than one.

We’ve made these without frosting before and they are insanely good, but with the frosting.. it seals the deal on these being my favorite brownies… ever.

Yep, you don’t need an ice cream machine to make this amazing homemade ice cream. I love this cause’ I may have the smallest kitchen known to man and I 1) don’t have any counter space to spare and 2) have absolutely no storage space for another kitchen appliance. So, from here on out it’s no churn ice cream for this girl. I mean how could you even tell this wasn’t made with an ice cream machine?

Anyways, I had made these marshmallows in Valentines Day themed sprinkles. I left them on the kitchen counter while I was at work for a day or so, I went to photograph them and it turns out Tom, my boyfriend, and his friend had munched the last couple marshmallows only a few days before Valentines Day!! So, these are no longer Valentines Day themed – Sorry! Although these sprinkles from Sweet Estelle make these marshmallows share-able.
